Steamed Fish and Okra Recipe
2 lbs. fish sliced, filet or whole.
1 tomato diced
A pinch fish of seasoning (dry rub)
1 dozen okra (Optional)
1 large onion
Sprig of thyme
1 medium sweet pepper
Scallion Sliced
Scotch bonnet pepper
Garlic crushed
4 tbsp. Olive oil
2 tbsp. powdered coconut milk
Salt and Black Pepper Mixed
Vegetable bullion (salt free)
1 tbsp. Butter (optional)
Clean fish and wash with vinegar or lime juice.
Add the mixed salt and black pepper to all open areas of the fish and set aside.
In a sauce pan over medium heat add the tomato, okra, onion, thyme, garlic and olive oil and fish seasoning Allow to cook for about 3 minutes until unions become translucent. (Stirring so that they combine well)

Add fish on top of stuff in the sauce pan then a cup of water.
Add also the powder coconut milk and vegetable bouillon.
Cover and simmer while every so often scoop some of the sauce and pour over the fish.
Check the taste for any adjustment such as salt or pepper.
Close to the very end add scallion and sweet pepper.
When you are satisfied with taste and texture of the sauce remove from the flames.
