This breadfruit cake recipe is tested and proven to be workable. If the method is followed correctly then the final product will be something to be proud of. Breadfruit can be eating at almost all stages before full maturity.  However in order to do justice to this breadfruit cake recipe the fruit needs to be at the final stage well ripen.
Breadfruit is a very popular food in Jamaica. It is mainly enjoyed boiled, roasted and or fried. Clearly in Jamaica we tend to marginalize its versatility by limiting the various ways that the breadfruit can be enjoyed. The flexibility of the Breadfruit makes it a fruit that can be enjoy anytime of the day. Breadfruit makes delectable cake, a delicate tasting pudding, delicious juice and the addictive fried chips are just a few of the many ways that breadfruit can be enjoyed.
Two and a half cups flour sifted
One and half cups sugar
Two teaspoon baking powder
Two teaspoon baking soda
One and a quarter cup canola oil
Five eggs beaten
Four cups ripe breadfruit a medium breadfruit will do.
Nutmeg and Vanilla
Nuts optional but goes well.

Preheat oven to 190 degree Celsius.
Mix together flour, baking soda, baking powder, salt and sugar.
Add oil and blend well.
Add the beaten eggs.
Add vanilla
Add the beaten breadfruit and mix in well.
Better done in a long baking pan for approximate 50 minutes, however it is paramount that you do your check after 40 minutes to see how well it is progressing while checking the middle for readiness. (Do the toothpick test) Enjoy.
