Stew Peas

1 lb. Red Kidney Beans
1 small dry coconut juice or 3 tbsp. powdered coconut milk
Thyme
Scallion
Garlic crushed
Vegetables such as (cho cho, carrot, Irish potato cut in cubes)
Salt and Black Pepper
1 or 2  cubes salt free bouillon
Soak beans for at least 2 hours
Pour off water along with any foreign material that may exist as well
Cook beans along with coconut milk until tender (pressure cooker will do)
Add all the other ingredients and season to taste.
Cover and simmer over medium to low flames until sauce is reduced and thicken but still runny.
Serve along white steamed white rice and vegetables of your choice. ENJOY!!!
This is the meatless version of the Jamaican stew peas which is quite enjoyable. However you may choose to add meats such as corned beef of corned pork if you so desire. The meat must be added at the beginning along with the beans and coconut milk and cook until tender. You may then eliminate the vegetables from the dish.
