Curry Shrimp Recipe


1 lb. shrimp (devein).
1 tsp. curry powder
Salt and black pepper.
˝ tsp. Seafood seasoning
Garlic diced
Sprig of thyme
Small onion diced
Escallion thinly sliced
Half of medium tomato chopped
Olive oil
2 oz. Coconut milk, or 1 tsp. coconut milk powder.
Some pimento seeds crushed.
Add 2 tbsp. Olive oil to a sauce pan over medium flames.
Then add seafood seasoning and curry powder.
Add tomatoes and onions and cook for about 3 minutes.
Next add coconut milk, salt and black pepper, thyme, garlic, pimento , half cup water and cook to taste.
When you are satisfied with taste and the sauce is reduced sufficiently next add
shrimp and escallion cook for about another  4 to 5 minutes and you are all done.
Make sure that before adding the shrimp the sauce is reduced all the down.
