Ackee And Saltfish
2 dozens fresh ackee or a tin of ackee (from the store)
1 sweet pepper cut in strips
Oil
Onion diced
Garlic diced
Thyme
Scallion sliced
Salt and Black Pepper
Soak saltfish in water for at least an hour to remove some of the salt.
Set to boil for about 10 minutes, then drain cut in cubes and set aside
If using fresh ackee cook them through remove when firm , drain
immediate not allowing them to become mushy.
If using tin ackee open the can and drain well
In a nonstick sauce pan add oil over medium heat
When oil is hot add saltfish, thyme, garlic, sweet pepper and onions. Stir well until onions become translucent (about 3 minutes) Add ackee , if using fresh ackee add also about ½ cup water as well. Stir frequently add salt and black pepper to taste, cover and simmer.
If using canned ackee which is always very soft add about ¼ cup of water, however make sure that you are satisfied with the taste of sauce before adding ackee since stirring will cause the already tender ackee not to hold its shape. Shake sauce pan instead, add black pepper cover and simmer.
